Chinese Pineapple Chicken


This is one of my father's specialties and he was so kind last week that he decided to make it for me. So, here it is. Enjoy! :)


Ingredients

Marinade:
2 tablespoons light soy sauce
1 tablespoon vegetable oil
1 tablespoon corn flour
1 teaspoon salt
½ teaspoon sesame oil
2 tablespoons water
75 dkg boneless chicken breast cut in cubes

Seasoning:
1.5 teaspoon corn flour
250 ml water or chicken stock
2 teaspoons dark soy sauce
 a pinch of salt
2 tablespoons vegetable oil
1 onion chopped
2 strings spring onion
2.5 cm finely chopped fresh ginger
4-5 pineapple rings cut to larger pieces.

Directions

1. Mix the ingredients of the marinade and put in the chicken to marinate for 10-12 minutes. 
2. Heat the vegetable oil in a wok and stir-fry the onion and the spring onions just until they become soft. 
3. Add the drained chicken to the wok and toast it for 3-4 minutes. Stir in the ginger and fry it for 1 further minute. 
4. Add the remaining marinade and the other spices and bring it to boil. Stir-fry it until the sauce thickens and put in the pineapple rings. Heat it up, then take it off the stove and serve it with fried rice or vegetable noodles.
